They utilize a fixed position, a spiral mixing arm and a rotating bowl. Spiral mixers are so widely used and popular because of their flexibility and the ability to minimize dough punishment. This type of mixers is strong enough for the production of bagels and gentle enough for ciabatta and French dough. A spiral mixer is a perfect addition for retail bagel shops, bread bakeries, large commercial bread plants, pizzerias, pastry shops and everything in between.

So, what is the secret, and how does it work? Well, the process is not that complicated having in mind the perfect result. The spiral mixing arm, the centre breaker and the rotating bowl all work together in unison to move the dough in and out of the mixing area. This process is what differs spiral mixers from planetary or horizontal ones. The process enables a much gentler blending action that results in high-quality final products. Moreover, the spiral mixer creates a much lower friction factor that minimizes the amount of heat generated by the dough rubbing against the bowl. So, the dough can be fully prepared much faster, before it reaches a critical temperature. When I say much faster, I mean that in some cases this is up to 40% faster when compared to other mixers.

Spiral types of mixers are available in a wide range of sizes and configurations. Depending on your needs you can find a model that has a dough capacity range starting from 30 or 40kg, to much bigger ones that offer a range from 100 to even 240kg of dough weight. Additional features that can make the whole preparation process much simpler are a removable bowl and two or more speed operations. A perk that many will find to be quite useful is the possibility to use the mixer for smaller quantities of dough than the ones the mixer was initially intended for. So, in a 100kg capacity mixer, you can effortlessly mix a much smaller quantity and still get the same quality. This is not often the case with other types of mixers.

As already mentioned above, there are spiral types of mixers that come with two-speed operations, and some even have dual programmable timers. Once you input the time and put the ingredients in the bowl, you are simply one button away from starting the process. After the set time passes, the mixer will turn itself off. This precision will guarantee that you will get an accurate mixing and a consistent quality with each batch. And lastly, since the programming is as simple as “set it and leave it”, the person in charge is free to pay attention and spend time on other tasks while the dough is being prepared.
